Manchester's New Wave Ramen take over the kitchen at Matsudai, Wales' only standalone ramen shop, for one day only. Tokyo-style bowls built on seasonal British ingredients and house-made noodles, including their lamb tantanmen, a vegan tantanmen and shirunashi mazesoba.

New Wave take over our kitchen for one day only on Sunday 13th September.
The Manchester team are with us from midday til 8pm, serving their lamb tantanmen, a vegan tantanmen and shirunashi mazesoba, alongside a selection of small plates, drinks and their own playlist.
New Wave's menu celebrates the new wave styles coming out of Tokyo, built on seasonal British ingredients and noodles made in their own in-house noodle room. Not to be missed.
